{"id":177,"date":"2013-12-03T09:58:56","date_gmt":"2013-12-02T21:58:56","guid":{"rendered":"http:\/\/www.asyouwish.co.nz\/blog\/?p=177"},"modified":"2016-01-13T09:25:37","modified_gmt":"2016-01-12T20:25:37","slug":"shot-glass-appetisers","status":"publish","type":"post","link":"https:\/\/asyouwish.co.nz\/blog\/shot-glass-appetisers\/","title":{"rendered":"Shot Glass Appetisers"},"content":{"rendered":"<h1><em><span style=\"color: #888888;\">1<\/span><span style=\"color: #888888;\"><em>2<\/em> Days of Christmas Ideas &#8211; Day 9<\/span><\/em><\/h1>\n<p>What is any social gathering without nibbles or appetisers?\u00a0 For many years it was the good old chips and dip or nuts and raisins.\u00a0\u00a0 More recently it seems to be the deep fried mini spring rolls and samosas served with sweet chilli dipping sauce.\u00a0 Now most guests would probably be happy any of these options, but why not step out of the box and wow your guests with any, or all, of these fresh and tasty shot glass appetiser recipes.<\/p>\n<h4 style=\"text-align: center;\">\u00a0<span style=\"color: #888888;\"><b><span style=\"text-decoration: underline;\">Veggie Shooters<\/span><\/b><\/span><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-179 alignleft\" title=\"Veggie Shooters\" src=\"http:\/\/www.asyouwish.co.nz\/blog\/wp-content\/uploads\/2013\/12\/dscf1999-1024x637.jpg\" alt=\"Veggie Shooters\" width=\"462\" height=\"287\" \/><\/p>\n<p><strong>Ingredients:<\/strong>\u00a0 Your favourite\u00a0dip, veggies like carrots, celery and capsicum cut into sticks.<\/p>\n<p>My favourite dip is the Classic Kiwi dip that uses the <a title=\"Classic Kiwi Dip\" href=\" http:\/\/www.nestle.co.nz\/brands\/milksbaking\/reducedcream\" target=\"_blank\">Nestle <\/a>Reduced Cream and Maggie Soup &#8211; although I like to swap the Onion soup mix for a Tomato or Tomato and Onion soup mix.\u00a0 Other alternatives you could use are hummus or guacamole.<\/p>\n<p>Put a couple of teaspoons of dip in the bottom of a shot glass and add the veggie sticks.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h4 style=\"text-align: center;\"><span style=\"color: #888888; text-decoration: underline;\">Satay Chicken Skewers<\/span><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-181 alignleft\" title=\"Satay Chicken Skewers\" src=\"http:\/\/www.asyouwish.co.nz\/blog\/wp-content\/uploads\/2013\/12\/dscf2016-1024x682.jpg\" alt=\"Satay Chicken Skewers\" width=\"462\" height=\"307\" \/><\/p>\n<p><strong>Ingredients:<\/strong>\u00a0 400g of chicken breast chopped into pieces approximate 2cm in size. Two bottles of Watties &#8216;Bit On The Side&#8217; Java Satay Sauce.<\/p>\n<p>Mix\u00a0the chicken with one bottle of the satay sauce, then leave in the fridge to marinade overnight or for at least a few hours.<\/p>\n<p>Soak the wooden skewers in cold water for at least an hour, then thread\u00a0at least 3 pieces of chicken onto each one.\u00a0 It should make approximately 25 skewers.\u00a0 Cook them on the BBQ, in the frying pan or under the grill.\u00a0 To serve, place a couple of teaspoons of the remaining satay sauce into each shot glass and serve with a skewer on top.<\/p>\n<p>&nbsp;<\/p>\n<h4 style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><span style=\"color: #888888; text-decoration: underline;\">Lamb Skewers with Tzatziki<\/span><\/span><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-180 alignleft\" title=\"Lamb Skewers with Tzatziki\" src=\"http:\/\/www.asyouwish.co.nz\/blog\/wp-content\/uploads\/2013\/12\/dscf2011-1024x680.jpg\" alt=\"Lamb Skewers with Tzatziki\" width=\"462\" height=\"307\" \/><\/p>\n<ul>\n<li><em>This recipe is based on one that I found in the ABC Delicious Cookbook named &#8216;Let&#8217;s Entertain&#8217;.\u00a0 <\/em><\/li>\n<li><em>It makes approximately 25 skewers.<\/em><\/li>\n<li><\/li>\n<\/ul>\n<p><strong>Skewer Ingredients:\u00a0<\/strong>500g lamb mince; 3 garlic cloves; 1 tsp ground cinnamon; 1 tsp ground cumin; 1\/2 tsp paprika; 1\/4 tsp of salt; 2 Tbsp greated lemon rind; 1\/4 cup of olive oil.<\/p>\n<p><strong>Tzatziki &#8211; <\/strong>1 Lebanese cucumber; 400ml of Greek yoghurt; 4 cloves of garlic; 3 Tbsp of mint chopped; 1 Tbsp of lemon juice<\/p>\n<p>&nbsp;<\/p>\n<p>To make the skewers, place all the ingredients in a bowl and mix together well using your hands.\u00a0 Mould small oval shapes onto each skewer.\u00a0 Put them into the fridge until you&#8217;re ready to cook them.\u00a0 When you&#8217;re ready, cook them\u00a0on the BBQ, in the frying pan or under the grill.<\/p>\n<p>To make the Tzatziki, halve the cucumbers lengthwise and remove the seeds but leave the skin on. Grate it into a bowl, sprinkle it with salt and set it aside for 15 minutes.\u00a0 Rinse the cucumber well, place in a clean tea towel and squeeze all the moisture out.\u00a0 Place it back into the bowl and add the remaining ingredients, mix together well and add salt and pepper to taste.
